This industry has grown to very large proportions in the United States, and it is thought that the results of the investigations made by Inspector Bitting, as based on a years inspection and experimentation, while not final in some particulars will yet be of interest and utility to the manufacturer as suggesting methods for a more economical treatment of the raw material and better sanitary conditions in the factory. The bulletin will also be of interest to the consumer in indicating the method of preparation of an article of diet which has come so generally into deserved favor in this country.
